FIELD: biotechnology.

SUBSTANCE: disclosed is a method for stimulating the lipolytic activity of Lactococcus lactis bacteria, characterized by the fact that Lactococcus lactis bacteria with density of 108 CFU/ml are cultured on a liquid nutrient medium MRS for 24 hours at temperature of 37 °C, bacterial biomass is separated by centrifugation, the supernatant is sterilized by passing through a membrane filter, and a culture liquid is obtained, 7% of olive oil of the total volume of mixture and 6% of a phosphate buffer with pH 7.0 of the total volume of the mixture are mixed separately, shaken, further, 8% of said culture fluid of the total volume of the mixture and a weighed portion of lithium pyruvate powder are added to the obtained mixture to obtain a solution concentration of 1.5-20 mmol/l, then shaken, incubated for 2 hours at temperature of 37 °C and 96% ethyl alcohol is added in amount of 79% of the total volume of the mixture.

EFFECT: invention provides higher lipolytic activity of Lactococcus lactis bacteria.
