SUBSTANCE: group of inventions relates to coffee industry. Described is system (100) for roasting coffee beans, comprising the following components: roasting device (1), wherein said device generates smoke, and smoke treatment unit (2) configured to collect and treat smoke generated by the roasting device, wherein the roasting device comprises a smoke discharge channel (11), and the smoke treatment unit comprises the following components: smoke inlet channel (21) configured to collect smoke, smoke filtration sub-unit (22), smoke feed actuator (23), configured to circulate smoke through the smoke treatment unit from the smoke collection device into the treatment unit outlet channel (25) smoke, wherein the system comprises an air supply device (24) configured to mix the smoke generated by roasting device (1) with the ambient air to control the smoke temperature inside the smoke filtration sub-unit (22), wherein said air supply device (24) is located upstream of the smoke filtration subunit (22) and said air supply device (24) comprises the following components: first wall (241) passing between the smoke outlet channel (11) of the roasting device and the smoke inlet channel (21) of the smoke treatment unit, and at least one through hole (240) in the said wall. Invention also discloses the design of the smoke treatment unit (2), which is part of the system, and a method of roasting coffee beans using said system.

EFFECT: group of inventions provides the possibility of controlling the temperature of smoke emitted by the frying machine, solving problems of protecting the filter from heated smoke, and providing not too high level of noise.
