SUBSTANCE: group of inventions relates to coffee industry. Disclosed is a coffee bean roasting system, comprising a coffee bean roasting apparatus, comprising a roasting chamber, a heating device, at least one first temperature sensor for controlling the temperature of air supplied by the heating device, which is located outside the chamber, a control system configured to control the heating device and made with possibility to reproduce frying curves, wherein each of frying curves provides, at least a set of points representing a temperature to be applied at separate successive times ti, respectively, wherein said control of the heating device is based on a temperature Treg, controlled by at least one first temperature sensor, and at least one second temperature sensor configured to be temporarily inserted into the roasting apparatus to measure the temperature inside the roasting chamber, and at least one means configured to create a pressure loss of the hot air flow, while there are no coffee beans in the chamber, for simulating the presence of coffee beans inside the chamber during a roasting operation. Also disclosed is a calibration chamber configured to be introduced instead of a roasting chamber of a roasting apparatus, and a method of calibrating the apparatus for roasting said system for roasting coffee beans.

EFFECT: group of inventions enables to ensure identical roasting at the same roasting profile in different roasting apparatuses.
