SUBSTANCE: invention relates to an apparatus for roasting pre-partially roasted coffee beans, comprising a vessel (1) for placing coffee beans, an electric heater (13) for heating the coffee beans contained in the vessel, at least one temperature sensor (23) for measuring the temperature in the vessel, a control system (180) configured to control the heater. The control system is configured to apply a roasting recipe designed to roast pre-partially roasted beans, including at least a temperature profile over time, measuring the concentration of at least one volatile organic compound in the smoke generated in the vessel during the application of the recipe frying, detecting an increase in the measured concentration depending on time, stopping heating if after the set control time there is no increase in the measured concentration.
EFFECT: invention eliminates the risk of ignition of coffee beans during roasting in apparatus that roasts partially roasted beans.
