FIELD: performing operations.

SUBSTANCE: invention relates to spray-dried encapsulated flavours in form of powder, having particles with large size, high fluidity, full density, and high dispersibility and/or solubility, low surface area to volume ratio, and high bulk density. Proposed is a spray-dried encapsulated flavouring agent in the form of a powder containing one or more encapsulated flavouring ingredients and characterized by the following characteristics: (A) dissolution time in the dispersed medium of less than 60 seconds; (B) dispersion time in the dispersed medium of less than 15 seconds; (C) a particle size distribution wherein at least 75% of the particles in the powder have a particle size of at least 80 mcm; (D) ratio of surface area (mcm2) and volume (mcm3) of powder particles in range from 0.01 to 0.03; (E) volume of voids in particles of less than 10% of total volume of particles; (F) bulk density of powder particles in range from 0.352 to 0.641 g/cm3 (from 22 to 40 lb/ft3), and (G) angle of natural slope of powder not exceeding 40°.

EFFECT: invention provides spray-dried flavouring agents in the form of powder, which provide high retention of flavour components and are advantageously produced by means of low-temperature spray drying processes, for example, single-step processes, within which drying is subject to intensification.
