FIELD: food industry.

SUBSTANCE: invention relates to food industry and can be used in production of functional products, production of food supplements. Disclosed is a method for the production of a food supplement in the form of frozen juice from wheat sprouts, wherein at first wheat grains are washed under running water, then pure wheat grains are immersed in water, into which ozone gas is supplied for disinfection, wherein water should cover wheat grains by 2–4 cm, after disinfection hydrogen peroxide is added in amount of 10 ml per 5 l of water, wheat grains are mixed and water is saturated with oxygen using aerator for 8–14 hours, until roots are formed on wheat grains, water is drained, wheat grains are washed without damaging the roots, and left for 2–4 hours for ventilation, then laid out on trays, covered from above and put in a dark place for 2–3 days for further germination of sprouts to length of 10 mm to 15 mm, at the same time, wheat grains are kept in a wet state by irrigation 1–2 times a day, and the temperature is maintained in range of 16 °C to 18 °C, wheat sprouts with length of 10 mm to 15 mm are opened and placed under sunlight or artificial light, light and dark mode alternating - 12–14 hours of light, then 12–10 hours of darkness, after reaching the length of wheat sprouts from 100 mm to 120 mm, they are cut and squeezed from sprouts with a screw juicer at low speed, controlling temperature of cake, preventing heating above 25 °C, wheat sprouts juice is poured into containers with volume of 10 ml to 30 ml and placed into a shock freezer cabinet at a temperature not higher than −35 °C, obtained frozen wheat germ juice is stored in a household freezing chamber at a temperature not higher than −18 °C.

EFFECT: invention enables to obtain a biologically active additive in the form of frozen wheat germ juice with preservation of high biological activity.
