FIELD: food industry.
SUBSTANCE: method for producing a crispy snack is proposed, according to which small intestine of a rabbit after primary treatment is cooked at temperature of 93±3 °C for 1.5-2 hours and cooled. Cooled rabbit small intestine is cut into pieces and marinated in a mixture of salt, which is used in an amount of half of the recipe mass, and allspice. Marinated pieces are breaded in wheat flour, liaison and repeatedly in wheat flour, and then deep-fried at temperature of 180-190 °C for 3-5 minutes. Ready pieces are sprinkled with a mixture of dried garlic and paprika. Liaison is prepared of chicken eggs, cold water and the remaining half of the recipe mass of salt.
EFFECT: invention allows to efficiently use slime rabbit by-products and to expand the range of snacks.
