FIELD: food industry.

SUBSTANCE: invention relates to food industry, namely to production of whole wheat-farro groats from grain mixture of wheat and farro grains. Method for production of whole wheat-farro groats is characterized by the fact that at first the initial raw material is purified, then a grain mixture is made from purified wheat and farro grains in ratio of 1:1. Further, it is subjected to three-fold successive peeling in vertical-type hulling machines “ЗШН” with grain size of abrasive No. 125 at the first stage of peeling, with grain size of abrasive No. 100 at the second stage, with grain size of abrasive No. 80 at the third stage. Then the formed peeling products are separated from the main mass by air separation on aspirators of the “УПС” type and directed to the peeling products carry-over bin. After each stage of peeling, crushed kernel is extracted from products of peeling of wheat-farro grain using a cockle remover with a cell diameter of 4 mm. The flow of whole wheat-and-farro groats is fed into the bin of finished products, and the flow of crushed wheat-and-farro groats is fed into the bin of secondary processing products.

EFFECT: invention allows to produce whole wheat and farro groats, as well as to expand the range of food products based on cereals.
