SUBSTANCE: invention relates to the food industry, namely to the production of food spelled flour from spelled grain. The spelled grain is pre-processed on peeling machines of the ZSHN type with the removal of up to 10% of the shells, moistened to a moisture content of 16-16.5% and tempered for 8-10 hours. The hulled spelled grain is crushed on roller machines with grooved rollers with a grooved back on the back (b/b), at a speed of rotation of a fast roll from 5.0 to 6.0 m/s, with a ratio of the circular speeds of fast and slow rotating rolls from 1, 5 to 2.5, with a cutting density of the rollers from 6 to 8 pieces per 1 cm, with a groove slope from 7 to 9%. Then, the grinding product is sorted on sieves of various sizes.

EFFECT: use of the invention will make it possible to efficiently process spelled grain to obtain spelled flour, which will expand the range of food products based on flour.
