FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to production of food triticale-farro-flaxseed flour. First, a milling grist is made from prepared grains of triticale and farro, as well as flax seeds in ratio of 4.6:4.6:0.8. Prior to grinding of finished triticale-farro-flaxseed milling grist,triticale and farro grains are subjected to hydrothermal treatment by cold conditioning, moistening to moisture content of 14-15% and softing for 9-11 hours. Milling grist is composed of hydrothermally treated grains of triticale and farro in amount of 92% and flax seeds in amount of 8%. Finished mixture is milled on roller machines with arrangement of flutes tip on tip with rotation speed of fast roller 6.0 m/s, with ratio of circular speeds of fast and slow rotating rollers 2.5, with cutting density of rollers 8 pieces per 1 cm, with slope of flutes 9%. Then the grinding product is sorted on sieves of various sizes.
EFFECT: invention makes it possible to develop an efficient technology of processing grains of triticale, spelled and flax seeds to produce triticale-farro-flaxseed flour for bakery and confectionary industry.
