FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to the production of food triticale-farro-hemp flour from triticale-farro-hemp grinding grain mixture. First, a grinding mixture is made from prepared grains of triticale and farro, as well as hemp seeds at ratio of 4.6:4.6:0.8. Before grinding the ready triticale-farro-hemp grinding mixture, triticale and farro grains are preliminarily subjected to hydrothermal treatment by the method of cold conditioning, moistening to moisture content of 14-15% and holding for 9-11 hours. Grinding mixture is composed of hydrothermally treated grains of triticale and farro in amount of 92% and hemp seeds in amount of 8%. Finished mixture is milled on roller machines with location of grooves point on point at speed of rotation of fast roller of 6.0 m/s, with ratio of circular speeds of fast- and slow-rotating rollers of 2.5, with cutting density of rollers of 7 pieces per 1 cm, with slope of grooves 8%. Further, the grinding product is sorted on sieves of various sizes.
EFFECT: invention allows to expand the range of flour-based food products by using products of processing grain milling triticale-farro-hemp mixture in bakery and confectionary industry, as well as to produce triticale-farro-hemp flour with high content of fat and protein.
