FIELD: food industry.

SUBSTANCE: disclosed is a method of producing a protein additive for fish products from secondary fish raw material, characterized by that the raw material is washed, milled, mixed with water, enzymatic hydrolysis is carried out at temperature of 40 °C for 2.5 hours, enzyme is inactivated by heating, wherein before hydrolysis raw material is preliminarily boiled at water ratio of 1:1 and temperature of 85 °C for 25 minutes, the enzyme preparation used is Enzi-Mix U with activity of 100 units/g in amount of 0.1% of the mass of the crushed secondary raw material, and after inactivation of enzyme preparation solid residue is separated from hydrolysate, which is dried, crushed to particle size of not more than 0.2 mm and used as a mineral component of a protein additive, after which a multifunctional mixture “МИТПРО М750” is added, as well as a food colouring agent at a certain value of the number of components, the components are mixed, the obtained product is formed, maintained at temperature of (0-4) °C for 1 hour to obtain a dense consistency and stored frozen.

EFFECT: invention enables to obtain a protein additive from secondary fish raw material, having a denser structure, which is preserved during heat treatment, with an enriched mineral composition.
