FIELD: food industry.

SUBSTANCE: invention may be used for production of high quality biologically active additive applied for direct food usage as a preventive agent or for creation of enriched functional and specialised food products. The biologically active food additive is represented by apple refuses powder produced by way of drying, cooling and subsequent milling. Before drying, apple refuses are treated in a UHF electromagnetic field with frequency equal to 2450 MHz, specific power equal to 180-300 W/dm3 during 30-90 sec; milling is performed till the content of particles sized no more than 0.05 mm in the additive is no less than 99%.

EFFECT: invention allows to obtain the ready product with maximum antioxidants content.
