SUBSTANCE: disclosed is a beetroot chips scalder, including a vertical housing equipped with a loading device with a rotary dispenser, a discharge hopper, driven vertical pipe shaft located along the axis of the housing with a rotating rotor fixed thereon, built into the housing, consisting of a horizontal receiving and distributing bottom with openings for supplying chips from a loading device through a rotary dispenser into the upper and lower sections of the scalder, horizontal partition between sections, as well as screw blades. Vibrators for creation of oscillations of pipe shaft, as well as tubular headers with nozzles located outside each section of housing. On the scalder cover a steam-air ejector having a vertical branch pipe for air inlet through the nozzle is fixed coaxially with the pipe shaft, horizontal branch pipe for superheated steam input into receiving chamber, a mixing chamber and a diffuser through which a steam-and-air mixture is forced through slotted holes into the upper and lower sections of the scalder.
