FIELD: food industry.
SUBSTANCE: group of inventions relates to the field of the food industry, in particular to the processing of whey. A functional food concentrate from whey permeate has been disclosed, containing as initial components whey permeate, jerusalem artichoke syrup, linden or sagan dale extract, or lemongrass, or echinacea, or oregano, or rhubarb, or elderberry, natural flavor, citric acid and water prepared in certain quantities. A method for obtaining such a concentrate is also described, including the preparation of a mixture of the components making up the concentrate, mixing the mixture with a paddle mixer at a speed of 500-800 rpm for a time of 10 to 40 minutes.
EFFECT: group of inventions provides a functional food concentrate having high organoleptic characteristics, low carbohydrate content, high content of biologically active substances, prebiotic properties, the ability to normalize the intestinal microbiota and increase the digestibility of nutrients while maintaining a high biological value of the product, as well as simplifying the technological process of preparing such a product.
