FIELD: microbiological industry. SUBSTANCE: this method prescribes introducing enzymatic preparation of yeast beta-galactosidase into nutrient medium which includes liver broth, peptone, lactose, sodium chloride, cystine and agar-agar taken in certain proportion in order to build up activity of nutrient medium. Before being introduced, preparation is prescribed to be dissolved in 1/10 to 1/2 part of liver broth together with lactose. Further steps are hydrolysis to be conducted under certain conditions, dissolving other enumerated components in remaining portion of liver broth and then admixing both portions of broth. This method fosters activity of nutrient medium, that is, imparts it bifidogenic properties and allows producing cultures of bifidobacteria having pronounced acid-forming capacity.
