FIELD: milk processing. SUBSTANCE: whey is separated and pasteurized. Then its fermentative hydrolysis together with electrodialysis is carried out. The former process takes place with the help of ferment preparation of β-galactose, its quantity being 0.0225-0.0275 of whey mass. Total duration of said processes is 2.0-2.5 h. EFFECT: improves quality of desired product, decreases expense of fermentative preparation, decreases duration of the process.
