SUBSTANCE: product is received by hydrolysis of squid gonads and has the following characteristics: content of dry substances, 30-36 mas.%; pH, to 5.0-6.0; content of ammine nitrogen, 0.85-1.2 mas. %; salt, in amount 15-16% from total mass of product. Method includes hydrolysis of squid gonads up to 1.2-1.5 mas.% of ammine nitrogen, neutralization up to 5.0-6.0 pH, boiling down up to 30-36 mas.% of dry substances, ageing not less 5 days, and deposit separation.
