FIELD: food industry. SUBSTANCE: plant for stabilization of juices and wines has vessels for stable and unstable starting materials, prime and discharged sediments, mixer and heat exchanger and separator located in one body separated by partition into two sections. Heat exchanger and separator are made in form of cylindrical and truncated-cone perforated drums communicated with their inner hollows and separated by shoulder made on inner surface of cylindrical drum. Perforated drums are secured to drive shaft coaxially to body in its sections in a spaced relation to it. Hollow of cylindrical drum is communicated with mixer, and hollow of truncated-cone drum is communicated with vessel for discharged sediments. The first body compressed air, and the second body section is communicated with the vessel for stable starting material. Perforations on cylindrical drum are made in form of nozzles. Such design allows maximum intensification of heat exchange, and speeded up coagulation of sediments due to placing on mixture of the unstable starting material with prime and ultrasonic vibrations.
