FIELD: food industry. SUBSTANCE: biologically active additive which contains aminoacids (at least 55 %), mineral substances (10 %), vitamins B1, B2 and PP is proposed for using in nutritive emulsion. Said emulsion contains (mass %): vegetable oil 5-70, egg powder 0.5-6.0, dry skim milk 1.5-10.0, sugar 1.5-3.0, biologically active additive 0.5-5.0, water the rest. Sun flower oil, or corn oil, or olive oil or soya oil, or mixture of sun flower and soya oil at ratio 2:1,1:1, 1:2 is used as mentioned above vegetable oil. It is advisable to add common salt (1.1-1.3 mass %), mustard powder (0.75 mass %), 80 % acetic acid ( 0.75 mass %), sodium bicarbonate (0.05 mass %), soya cake (0.5-3.0 mass %) or dry whey (0.5-9.0 mass %) into said emulsion. Also curdled milk (10-15 %), butter (25-35 %), nuts (5-10 %), cacao (5-8 %) and cinnamon (0.05-0.08 %) may be added into said emulsion. Proposed emulsion is prepared by mixing water, sugar, dry skim milk and egg powder followed by adding biologically active additive into thus prepared aqueous-protein phase. The process is carried out at 35-40 C. Thus prepared mixture is allowed to stand within 15-20 min, then emulsification by vegetable oil is carried out. Curdled milk, sugar, butter, nuts, cacao and cinnamon being added when emulsification is completed. EFFECT: improves quality of desired product. 13 cl, 1 tbl
