FIELD: food industry.
SUBSTANCE: invention relates to food industry. Mayonnaise includes an oil fraction, egg powder, skimmed milk powder, mustard powder, sugar, salt, soda, acetic acid, water. At the same time, the oil fraction consists of vegetable refined deodorized oils or their mixtures (blends providing the necessary ratio ω-6 (linoleic and γ – linolenic) and ω-3 (α – linolenic) acids) and an oil extract of spicy-aromatic plant material or a mixture of extracts in the ratio of oil: extract – 10:1…7:1. Oil extract is an oil extract of BAS after preliminary grinding of dry finely divided raw materials with ethanol (90–94 %) to pasty state, with a certain ratio of components. Mayonnaise is obtained, with the following ratio of components, mass %: oil fraction – 62–66, egg powder – 2–5, skimmed milk powder – 1–3, mustard powder – 0.5–1, sugar – 1–3, table salt – 0.9–1.2, soda for drinking – 0.04–0.06, acetic acid, 80 % solution, 0.5–1, water – the rest.
EFFECT: invention makes it possible to give the product functional properties, as well as reduce the risk of microbiological contamination of the product.
