FIELD: food industry. SUBSTANCE: this method prescribes decoating water melons, removed peel having thickness of 0.5 to 2.0 mm, cutting pulp and parafetal portions into lumps each having surface area of 0.7 to 3.0 sq. cm and 1.0 to 4.0 sq. cm, respectively, separately infusing pulp and parafetal lumps with sugar, infusing pulp lumps in two stages, mass ratio of pulp lumps to sugar being 1 (0.2 to 0.25) at each stage, during 2 to 5 h and during 1 to 2 h at second stage, mass ratio between parafetal portion lumps and sugar being 1 (0.2 to 0.3), during 3 to 7 h at first stage and during 2 to 5 h at second and third stages, conducting second and third stages of infusion of parafetal lumps at temperature of 30 to 40 C, mixing both portions of juice prepared in all stages, heating whole to boiling point, boiling admixture at temperature of 60 to 75 C to 70 80 content of dry components, then discontinuing boiling, and finally continuously stirring resultant foam stock to obtain dry loose product. EFFECT: excellent semi-finished product that may find numerous applications in food industry.
