FIELD: fish industry. SUBSTANCE: method two stages of preparation of squid farce. At the first stage minced squid meat is kept in a refrigerating chamber at a temperature of at least 5 C below zero until the start of the process of crystallization. The second stage involves supplementation with some additives and repeated cooling at a temperature from zero to 3 C below zero for 6-13 h. For dehydration, the raw material is exposed to air jets. The half-finished product is molded, and it receives thermal treatment. The latter is blanching in an aqueous solution of salt for 2-2.5 min followed by freezing.
