FIELD: food-processing industry. SUBSTANCE: homogenizing head has seat and valve whose working surfaces are provided with annular grooves and projections, which form slit defining discharge chamber. Product flow direction in this chamber is opposite to that of flow entering slot. Chamber may have cross sizes exceeding that of slit and may include vortex chamber or may be provided with console cutting edge. Product flow is supplied under pressure to slit positioned between seat and valve working surfaces and subjected to homogenization. Discharge chamber provides for damping of dynamic pressure disturbances occurred and cross sizes of chamber exceeding that of slit facilitate efficiency damping. Product is additionally ground in vortex chamber in vortex liquid centrifugal force gradient field. Cutting edge improves homogenization quality by dispersion effect of ultrasonic emulsifier.
