FIELD: food industry. SUBSTANCE: product: oligomer of chitin or chitosan containing terminal groups of 2,5-anhydromannose or 2,5-anhydromannitol of the formula given in description text. Method of oligomer synthesis: interaction of chitin or chitosan with nitrous acid or sodium nitrite in an aqueous solution at pH 3-4, at 10 C (not above) followed by neutralization of reaction mass, hydrogenation of synthesized oligomers in the presence of reducing agent and/or cooling. Interaction can be carried out in the presence of solubilizing agent - organic acid, and neutralization can be carried out with ammonia, alkylamine or anion-exchange resin after reaction termination.
