FIELD: food industry.

SUBSTANCE: invention relates to a powdered composition containing probiotics. Dried powder composition containing solid particles comprises a living probiotic microorganism and a carrier phase. Said living probiotic microorganism is encapsulated. Said phase comprises an enterosoluble composition, and also at least a source of nutritive substances. Composition is characterised by particle size distribution between n and (n +400) mcm, where n ranges from 100 to 10,000 mcm, preferably from 300 to 5,000 mcm, more preferably from 400 to 1,000 mcm. Solid particles are spherical particles, containing from 50 to 80 % of said living probiotic microorganism. Said dried powder composition is produced during formation of drops in laminar flow. Also disclosed is a method of producing said composition. Method comprises preparation of living probiotic microorganisms and carrier phase, containing at least a source of nutrients, extrusion of mixture to produce microspheres and collection of said microspheres in tank containing a solution for hardening. Extrusion is performed at preset flow rate of liquid from 0.2 to 5 m/s through at least one vibrator nozzle during formation of drops in laminar flow for producing said particles in form of spherical powder particles. Said vibration nozzle has vibration frequency within range from 1 to 20,000 Hz and amplitude of vibrations at least 0.5 mcm.

EFFECT: invention enables to obtain a composition with high stability and survival rate of probiotic bacteria, as well as with longer storage life.
