FIELD: food industry.
SUBSTANCE: invention relates to processing secondary raw material of animal origin, in particular, to production of ingredients for meat industry. The collagen-containing raw materials (skins or their wastes) are cut into 25×25 mm2 pieces. The raw materials are treated with an alkaline-salt solution, containing sodium hydroxide with concentration of 8-13% and sodium chloride in an amount of 5-8 during 13-30 hours, and washed with a salt solution of sodium chloride with concentration of 6%. The raw materials are neutralised in 9% acetic acid solution in the presence of 6% sodium chloride solution till pH value is equal to 5.5-6.8. The solution is drained while the semi-product is poured with 6% acetic acid solution at a float ratio of 2-3. The semi-product is homogenised and filtered through capron fabric. One adds ascorbic acid and stirs the produced mixture.
EFFECT: invention allows to manufacture a product promoting production of a wide range of functional food products and ensuring immobilisation of various biologically active substances, in particular, vitamin C and reduce this vitamin losses.
