FIELD: food industry.
SUBSTANCE: invention relates to flour and cereals industry, particularly to processing of barley. During treatment of barley grain, said grain is moistened with water with vacuum build-up, conditioning and drying. Moistening of grain with water is carried out with its supply in an amount ensuring moistening to 19-21 %, followed by high-speed vacuum build-up for 0.1-0.5 s to residual pressure 0.04-0.06 MPa. Then by means of screw of vacuum apparatus, method includes intense mixing of grain and high-speed supply of atmospheric air for 0.1-0.5 s. Grain conditioning is carried out for 8-10 hours. Then grains are dried in a dryer with a drying agent at temperature 110-130 °C to moisture content of grain of 13.5-15.0 %.
EFFECT: invention reduces power consumption in process of hydrothermal treatment of grain.
