FIELD: meat industry, in particular, freezing of large-sized products such as bones.
SUBSTANCE: method involves placing product such as bones in netted container; spraying with potable water used in an amount of 0.5-0.7% by weight of product and blowing-through with air having temperature of 12-16 C at flow speed of 2-3 m/s; freezing during 12-14 hours to produce block of frozen product; withdrawing resulted product from container; wrapping in film and storing in refrigerating chamber.
EFFECT: simplified process for freezing of coarse products and provision for obtaining of block ready for storage and transportation without necessity of further processing.
