FIELD: sugar producing industry. SUBSTANCE: invention can be used to check crystalline product in crystallization plant of sugar producing industry. According to proposed method effective viscosity of dry sugar boilings is measured and supersaturation factor of intercrystalline solution is obtained by calculation. In this case value of total loss tangent of dielectric of dry sugar boilings is measured simultaneously in addition and supersaturation factor is determined by quadratic model relating supersaturation factor, loss tangent of dielectric and effective viscosity.
