FIELD: beet sugar industry. SUBSTANCE: method involves high-frequency measuring of total loss-angle tangent of syrup condensed to oversaturated state of syrup at frequency of alternating current of 8.0-27.0 MHz; simultaneously providing continuous measuring of syrup active low-frequency resistance and calculating product of total loss-angle tangent and active low-frequency resistance; further using total loss-angle tangent value at which mentioned product has minimum value as standard value for determining total loss-angle tangent relative values, with the latter being determined by dividing its current values by standard value. Oversaturation coefficient is calculated by linear mathematical model, with total loss-angle tangent relative values being taken into account. Method may be used for controlling oversaturation coefficient of massecuite stock solution to obtain crystal product in vacuum units.
