FIELD: food and microbiological industries. SUBSTANCE: invention relates to methods of preparing baking yeast biomass (commercial yeast) on nutrient medium containing starch-containing products using cereal crops flour, for example, rye, wheat, barley and bran as the parent raw. Method involves culturing of yeast under aeration condition on nutrient medium containing enzymatic hydrolyzates of starch products as a carbon source, the known mineral salts - as a source of nitrogen and phosphorus and yeast autolyzate, acid hydrolyzate of rye bran, berry and fruit residues and their mixtures as a source of growth stimulating agents. To obtain hydrolyzates water is added to starch-containing raw, mixture is heated, pH value is brought about to 3.0-5.6. Mixture is kept, pH value is changed to 5.8-6.4 and amylosubtilin is added. Hydrolysis is carried out at this pH, at 80-85 C. Then hydrolyzate is cooled to 55-65 C, pH is brought about to 4.5-5.6, glucavamorin is added and mixture is kept at above indicated parameters. Hydrolyzate obtained at the second stage is heated to 80-100 C and separated for the solid and liquid fractions. Solid fraction is removed and liquid fraction is used as a base of nutrient medium where nitrogen and phosphorus sources and growth agents are added, yeast are inoculated and cultured.
