FIELD: sugar industry. SUBSTANCE: method involves juice purification by its heating and acidifying to decrease pH value of medium and coagulate proteins followed by their separation, filtration or centrifugation and electrolysis of juice using active electrodes forming polyvalence ions at dissolving and providing colloid coagulation and the following precipitate removal. Purified juice is subjected for ultrafiltration and ultrafiltrate is subjected for electrodialysis, ion-exchange purification and treatment with activated carbon. Sugar-containing solution is concentrated by reverse osmosis and then evaporated to concentration providing prolonged storage. EFFECT: improved method of production. 2 cl
