FIELD: alcoholic beverage industry. SUBSTANCE: vodka is prepared by mixing ethyl rectified alcohol "Extra" and water, filtering through carbon, introducing ascorbic acid after filtration in two stages by equal parts with short-time ageing between stages. In the process of ageing vanillin is added. Prepared vodka contains the following ratio of ingredients, kg/1000 dal: ascorbic acid, 0.13-0.16; vanillin, 0.002-0.004; aqueous-alcoholic liquid, the balance. EFFECT: increased biological value by stabilization of ascorbic acid; broadened assortment of vodkas with treatment-and-prophylactic properties and with slight cocoa tone in taste and aroma.
