FIELD: food industry.
SUBSTANCE: invention is related to meat industry. Pork skins are mechanically treated and maintained in brine for no less than 24 hours. The solvent is represented by low-mineralised water fractions produced in the anode or cathode space of a diaphragm electrolyser. The produced hydrolysate is milled in a cutter with addition of water of the type as applied for the brine preparation at a ratio of 1:1.
EFFECT: invention results in enhancement of environmental friendliness of the technological process, improvement of safety indices of the ready semi-product and moisture-holding indices of the ready products without detriment to organoleptic properties.
