FIELD: fat-and-oil industry. SUBSTANCE: method consists in tangentially filtering oil or anhydrous fat substance in liquid hydrophobic phase through hydrophobic membrane allowing separation of original material into permeate and retentate. The latter constitutes above-mentioned high melting point fraction and the former low melting point fraction. Apparatus contains tangential filtration module with hydrophobic membrane, which can be manufactured from fritted metal or from hydrophobic polymer. Porosity of hydrophobic membrane ranges from 0.005 to 1 mcm. EFFECT: enhanced separation efficiency. 13 cl, 5 dwg
