FIELD: food industry. SUBSTANCE: production of bifodogenic additive for infant dairy products and dietary products is conducted as follows. 10 M sodium hydroxide solution is added to warmed lactose solution to pH 9.5-10.5. Mixture is then thermostatically controlled at 68-71 C for 55-65 min while maintaining pH at the previously achieved level by repeatedly adding sodium hydroxide solution. Isomerized solution is cooled, purified, and filtered. Lactulose solution is concentrated, lactose is crystallized, and its crystals are separated. Lactose-free solution is further concentrated, pasteurized, and packed. EFFECT: increased lactulose level in its concentrate and improved organoleptic characteristics of the latter. 5 ex
