FIELD: biotechnology.
SUBSTANCE: disclosed is a method of producing lactulose, involving preparation of an alkaline agent with addition of initial dry lactose, heating mixture to 55-70 °C and temperature control for 30-60 minutes with subsequent cooling to 15-35 °C, acidification with hydrochloric or nitric acid until gelling with further purification by diluting with water in a given proportion; then centrifuged to separate concentrated gel with subsequent condensation of lactulose solution by means of vacuum evaporation. Alkaline complex reagent is prepared as an aqueous solution from a mixture of sodium aluminate in molar ratio of 0.8-1.2 to the amount of the initial lactose, sodium sulphite in molar ratio 0.1-0.3 to amount of initial lactose, sodium hydroxide in molar ratio 0.2-0.6 to amount of initial lactose and water in proportion of 0.8-1.2 litres per 1 kg of initial lactose.
EFFECT: invention provides a wider range of methods of producing lactulose with high output of the end product.
