FIELD: biotechnology. SUBSTANCE: milled meat or meat-bone raw is homogenized with water and defatted. Enzymatic hydrolysis is carried out with a complexes of proteolytic enzymes obtained from slaughtering animal pancreas and protosubtilin Г20x.. Horn-hoofed meal and defatted fraction after fermentation can be used as the raw. Biomass is mixed with the meat-bone broth and slaughtering animal blood taken at the equal ratios and kept at 45-50 C for 20-34 h. Horn-hoofed meal is subjected for acid hydrolysis at 110-120 C for 5-6 h with the solid fraction followed by cooling and drying. Fermentation of the fat fraction is carried out with bacterial yeast culture Candida tropicalis, strain VSB-28, in the presence of mineral salts at 37-40 C for 6-8 h under continuous aeration. Invention can be used for preparing the protein hydrolyzates in food, medicinal and other branches of industry.
