FIELD: biotechnology. SUBSTANCE: method involves grinding raw material and homogenizing it with water; performing defatting and thermal treatment with live steam at temperature of 120-140 C in vacuumizer under pressure of 0.2-0.4 MPa; cooling to 40-45 C; providing enzymatic hydrolysis; heating produced hydrolyzate to temperature of 110-120 C while continuously mixing it; cooling liquid fraction, filtering and drying. Method provides protein conversion extent of 50%. Protein hydrolyzate has low content of cinder substances and amino acid composition satisfying requirements. Protein hydrolyzate is produced from meat, meat-and-bone, bone raw material of slaughter animal.
