FIELD: biotechnology, microbiology and food processing industry.
SUBSTANCE: claimed method includes treatment of waste from meat raw materials obtained form slaughter animals with microbial- and animal-origin enzymes at elevated temperature and continuous agitation of reaction mixture followed by separation of hydrolysis products and drying. As waste from meat raw materials slaughter blood, extract from slaughter animal bones and beer yeast are used. Said components are previously blended in volume ratio of 1:1:1, agitated at 40-50°C for 3-4 h followed by treatment with enzymes including crab hepatopancreas and extract form pancreas of slaughter animals, up to complete amine nitrogen building-up. Cell membranes of unreacted beer yeast are separated followed by solution filtration. Target product is dried by spray drying.
EFFECT: method with increased effectiveness and hydrolysis depth; target product of improved moisture-retaining power and organoleptic characteristics.
