A mixture is homogenized, heated by pasteurization and fermented using microorganisms Bifidobacterium adolescens MC-42, Propionibacterium schermanii E-6, Lactobacillus acidophilus, Lactobacillus plantarum 31 taken separately or as a mixture at an equal amounts. Then addition is kept in thermostat up to pH value from 4.8 to 5.1. Addition provides recovery of the human gastroenteric tract ecosystem. Its addition to ready foodstuffs can improve their properties. Invention can be used in technology of production of meat and other foodstuffs.
