SUBSTANCE: food structure-regulating additive for molded products contains protein, starch, chopped bean, phosphates, and chopped sea kale. Components have the following ratio, mas.%: protein, 18-25; starch, 42-57; chopped, 10-15; phosphates, 6-8; chopped sea kale, 0-10. Said additive is introduced in farce systems in amount of 1.5-5.0% from farce mass, then spices and water are added, and mixture is mixed, molded and sent to heat treatment. Prepared molded products possess higher structure-forming properties due to qualitative and quantitative selection of components which in their composition provide synergism action.
