FIELD: food industry, preparative biochemistry. SUBSTANCE: invention relates to a method of preparing DNA sodium salt that can be used as a food addition. Homogenized frozen waste from production of the lydazum preparation are used as the parent raw. A mixture is treated in sodium chloride solution at 80-90 C for 1 h followed by exposition at this temperature for 1-1.5 h. Sodium chloride solution is used at the concentration 10-10.5% and filtrate is purified through the porous material threefold and concentrated by 5-6 times. Drying is carried out at 40-90 C.
