FIELD: food industry.
SUBSTANCE: strain Saccharomyces cerevisiae 1039, VKMP Y-3327, having osmophilic properties and used to obtain ethanol from grain during fermentation of a highly concentrated wort. The strain was obtained as a result of selection and mutagenesis from a known strain Saccharomyces cerevisiae VKMP Y-3136.
EFFECT: improved efficiency of the alcohol production, reduced water consumption as well as yield of distillery dregs.
