FIELD: agriculture. SUBSTANCE: method involves hydraulic cooling and charging newly harvested fruit or vegetable into temperature-controlled storage. Hydraulic cooling is provided by aqueous solution of arachidonic acid salt with N-heterocyclic bases. Method allows fruit or vegetable to be prepared for prolonged storage. EFFECT: increased efficiency and reduced corrosive wear of equipment used for hydraulic cooling of fruit or vegetable.
