FIELD: agriculture. SUBSTANCE: method involves providing hydraulic cooling of freshly harvested fruit or vegetable and charging into temperature-controlled storage. Hydraulic cooling is provided by using aqueous solution of salt of eicosapentanic acid with alkali metals and/or ammonium. Method allows fruit or vegetable to be properly treated prior to laying for storage. EFFECT: increased storage life and reduced corrosive wear of hydraulic cooling equipment.
