SUBSTANCE: method involves hydraulic cooling and charging of fruit or vegetable into temperature-controlled store. Hydraulic cooling is performed by using aqueous solution of salt of eicosapentic acid with N-heterocyclic bases. EFFECT: reduced corrosive wear of hydraulic cooling equipment.
