FIELD: agriculture. SUBSTANCE: method involves providing hydraulic cooling and charging fruit or vegetable into temperature-controlled storage. Hydraulic cooling is provided by treating fruit or vegetable with aqueous solution of salt of arachidonic acid with alkali metals and/or ammonium. Method allows freshly harvested fruit or vegetable to be properly treated prior to laying for storage. EFFECT: prolonged storage life of fruit or vegetable and reduced corrosive wear of hydraulic cooling equipment.
