FIELD: food-processing industry. SUBSTANCE: method involves processing buckwheat grain without dividing it into fractions; providing hydrothermal treatment; soaking and drying grain to moisture content of 15.5-18%; providing shelling in centrifugal sheller, with grain colliding against fixed barrier at the rate of 55-58 m/s; separating groats from grain and providing additional drying of groats to storage humidity of 13%. Method may be used for processing of different kinds of cereal grain into groats. EFFECT: increased efficiency, wider range of produced groats and reduced consumption of power for thermal treatment. 1 dwg
